Work through the plan
- For each dish, record its components, expected portions and preparation owner. Keep assumptions visible so the plan can be adjusted.
- Assign a preparation sequence and record the storage and handling requirements agreed with your food-safety lead.
- After service, note quantities used, leftovers and bottlenecks. Use the review to improve the next preparation plan.
